Let loose the Dogs of War!

So I'm kinda bored of being hemmed into the whole 3" move with my dwarves, and since I'm a minor addict I decided I wanted to run a small dogs of war army for a couple skirmish games, (also a way to sucker friends into warhammer by giving them an army to play with me :whistle: ) now I currently have:
~ 20 heavy cav. models
- 5 kislev horse archers - light cav.
- 10 empire free company which make for passable duelists
- 10 empire spearman
- 10 dwarf crossbowmen
- bajillion dwarf combat units
~ 2 or 3 mage models 1 mounted 2 on foot
- 1 Mercenary fighter mounted
- 1 truthsayer (it was on sale for like 3 bucks and I thought it would be amusing)
- 1 Paymaster substitute
- 2 cannons
- The witchhunters (going to throw the one with the pistols in the duelist pile as I don't think they'll be a great battlefield choice)

So I'm wondering what sort of passable list I could make using these models(and proxies until I get more) at 500pts and where to expand for 1000 and 1500. Also what would be the most important models to look into for making a combat ready DoW army.
